One of the most remote restaurants in Britain has been rated as one of the best in the world by a leading food critic.
The Three Chimneys restaurant at Colbost in Skye is among the top five eateries in the world according to legendary reviewer Frank Bruni.
The Pulitzer-prize winner described the eatery as “an enchanting experience through and through” and named the five star venue as one of his top five establishments in the world.
For owner Shirley Spear its the icing on the cake in what for her has been a 25 year labour of love.
“We really had to work hard at it in the earlier years and make sure people found the experience worthwhile and worth repeating and somewhere they would tell their friends about and come back another time.”
Local produce has been identified by the owners as the main reason for The Three Chimney’s success. Fresh fish and shellfish are sourced from the waters close to the restaurant and an abundance of gourmet organic salad leaves are grown just a mile or so down the single-track roads.
Head chef Michael Smith says it is a privilege to have his pick of nature's finest larder.
“Scottish produce is undoubtedly the best in the world and we’re surrounded on the Isle of Skye by all of that, literally on our doorstep. In the summertime we can get almost 100% local produce. We always represent all the local shellfish, meat, lamb, oysters, prawns – everything we can we will try to get on the menu that day for service.”
